On Tuesday 14 April, ITŌ welcomes Brendan Pang to Crown Street for a single evening of Italo-Chinese dining alongside our Executive Chef Erik Ortolani.

Brendan — MasterChef Australia alumnus, founder of Bumplings and author of This Is A Book About Rice — has spent his career bringing the flavours of his Chinese-Mauritian heritage to life through technically grounded, deeply personal cooking. Together with Erik, whose kitchen sits at the dialogue between Japanese and Italian cuisine, the result is a menu built on a simple truth: both traditions speak the same language.

Dough, depth and heat. Dumplings and agnolotti. Master stocks and slow ragù. Chilli oil and olive oil. Different histories, the same instincts.
